Where to dine: Our must-try dining options

ALLOUTTE

Dining at Alouette is nothing short of a transformative experience. From the moment you step into the stunning historic building opposite Kongens Have, you’re enveloped in a sense of intimate grandeur. The design, masterfully executed by architect David Thulstrup, draws inspiration from the natural beauty of stalactite caves, creating a space that feels both awe-inspiring and warmly inviting. The spacious dining room, lounge, and private dining area with its own open kitchen are a testament to the thoughtful evolution of this Michelin-starred restaurant.

The menu is a celebration of local farms and Danish terroir, brought to life through rustic yet elegant culinary style. What sets Alouette apart is not just the food but the philosophy behind it. The close collaboration with local farms, where each pair of chefs is responsible for one farm, fosters a deep connection to the ingredients and their origins. This approach not only enriches the dining experience but also aligns with the restaurant’s commitment to sustainability and community.

Alouette feels like a dream realised—a space where the past and future of culinary art coexist beautifully. Dining here is more than just a meal; it’s an exploration of flavours, stories, and sustainability, all wrapped in an atmosphere of warmth and elegance. Alouette continues to set the bar high, offering an unforgettable experience that honors its roots while embracing the possibilities of the future.

ALCHEMIST

Dining at Alchemist in Copenhagen was unlike anything I’ve ever experienced—it was a culinary, artistic, and emotional journey that left me utterly mesmerised. From the moment I stepped into the futuristic dome, I felt transported to another world. The ceiling came alive with swirling galaxies, underwater scenes, and abstract art, setting the stage for what would be a truly unforgettable evening.

The 50-course tasting menu, curated by Chef Rasmus Munk, is a masterpiece of creativity and storytelling. Each dish is a work of art, not just in presentation but in the ideas it conveyed. One course, a dessert resembling a "plastic ocean," highlighted the urgency of marine conservation. Every bite is a surprise, and every course is like a new chapter in an epic story.

What truly set Alchemist apart was the theatricality of the experience. The staff, dressed in sleek, futuristic attire, moved with precision and grace, enhancing the sense of being part of a grand production. Performances and interactive elements keep you engaged, and the immersive projections made me feel like you are dining in a dream. It isn’t just a meal—it was a performance, a conversation, and a call to action.

The restaurant’s commitment to sustainability and social responsibility added depth to the experience. Knowing that each dish was crafted with ethical sourcing and a message made the meal even more meaningful. Alchemist isn’t just about pushing culinary boundaries; it’s about using food as a medium to inspire change.
